A perfect blend of your fave veggies, some spices and, of course, the Zoglo’s Incredible™ Shawarma Style Strips. Vegetable soup never tasted so good!

Ingredients

1 Package of Zoglo’s Incredible™ Shawarma Style Strips

1 Onion (coarsely chopped)
-
4 Stalks of Celery (coarsely chopped)
-
6 Carrot (coarsely chopped)
-
2 Cloves of Garlic
-
1-Inch Piece of Ginger (peeled and chopped)
-
Broccoli Stems (as many as you have!) (coarsely chopped)
-
1 900ml Box of Vegetable Stock (low or no sodium)
-
4 Tablespoons of Extra Virgin Olive Oil (divided)
-
Salt (to taste!)
-
Freshly Ground Black Pepper (to taste!)

1 Green Onion (finely chopped) [for garnish]

1 lemon, cut into wedges, [for garnish]

2 Medium Potatoes (Peeled and Chopped)
-
Cayenne Pepper [for garnish]
-
Pita Bread [for accompaniment]
Directions
Heat 2 tablespoons of the olive oil in a large heavy bottom pot over medium heat and add in the onion, celery and carrots along with a pinch of salt and pepper
Cook until the vegetables are softened and fragrant (about 7-8 minutes!)
Add in the garlic, ginger, potatoes and any broccoli stems you have
Give it a good stir and continue to cook for another 5 minutes or so
Add in the vegetables stock just so it covers the vegetables
Bring to a boil, reduce the heat and simmer (with the pot covered!) until all of the vegetables are very tender (about 15-20 minutes!)
Using a regular blender or an immersion blender, purée the soup until smooth, check for seasoning. Cover until ready to serve
Heat the remaining 2 tablespoons of olive oil in a large non-stick frying pan over medium-high heat and cook the Zoglo’s Incredible™ Shawarma Style Strips for 4-5 minutes (toss occasionally!)
To serve, ladle the soup into bowls, top with Shawarma, green onion, a pinch of cayenne pepper and a squeeze from a lemon wedge
