The Incredible Cutlet on Brioche - Cucumber, Celery and Cherry Tomato Salad

Ingredients

1 Package of Zoglo’s Incredible™ Cutlet

4 Brioche Round Buns
-
4 Slices of Aged Cheddar Cheese (or non-dairy cheese) [optional]

1 Avocado (thinly sliced)
-
¼ Cup of Mayonnaise (or vegan mayo)

1 Tablespoon of Sriracha Sauce
-
A Small Bunch of Spinach
-
Red Onion (thinly sliced)
-
½ of a Cucumber (chopped)
-
½ Pint Cherry Tomatoes (cut in half)
-
2 Stalks of Celery (chopped) (inner stocks with leaves are always the best!)

3 Tablespoons of Extra Virgin Olive Oil
-
1 Tablespoon of Balsamic Vinegar
-
Salt (to taste!)
-
Freshly Ground Black Pepper (to taste!)
For the Salad
Directions
For the Cutlet
Preheat oven to 400 degrees
To make the spicy mayonnaise, combine hot sauce and mayo in a small bowl and set aside
Place the Zoglo’s Incredible™ Cutlets on a lined baking sheet and bake for 8 minutes. Turn over, top it with cheese and bake for another 6 minutes
For the Salad
Toss the cucumber, cherry tomatoes and celery in a bowl
Dress with the extra virgin olive oil , balsamic vinegar and season with salt and pepper (Be sure to mix this well!)
To Assemble the Sandwich
Spread the spicy mayo on the top and bottom of the buns
Place some spinach on top of the bottom bun, then place the cutlet on top of the spinach
Top with avocado slices, red onion slices and finally the top bun
Serve alongside with salad

Pro-Tip: Make this meal vegan friendly by removing the cheddar cheese and mayonnaise or by using non-dairy cheese and vegan mayo!
