This shawarma burrito is loaded with guacamole, plant based shredded mozzarella and, of course, our Shawarma Strips. Bet you never had a burrito like this before!

Ingredients

1 package Zoglo's Shawarma Strips, from frozen

2 small to medium sweet potatoes

1 cup of guacamole
-
¼ cup of plant based shredded mozzarella

1 lime, cut in wedges

1 hot pepper, thinly sliced
-
Fresh cilantro
-
4 large flour tortillas (10-inch)

Salt and freshly ground black pepper

Extra virgin olive oil
Directions
Preheat oven to 400 degrees. Line a baking sheet with parchment paper
Wash, scrub and dry sweet potatoes. Cut into ¼ inch slices
Brush with extra virgin olive oil and season with salt pepper on both sides
Bake in the center of the oven for 20-25 minutes
Heat a tablespoon of vegetable oil in a large frying pan over medium heat and cook the Zoglo's Incredible Shawarma Strips for 5 minutes, tossing occasionally
To Assemble
Lay out the tortillas and spread some guacamole in the center
Top with a sweet potato or two, some shawarma, lime juice, hot pepper, shredded cheese and cilantro
Roll up tight and place into the warm pan that had the shawarma
Place the tortillas back on the heat and toast them until warmed through and golden brown

Notes: Remove hot pepper for less spice but the same great taste!
