Nothing says Sunday breakfast more than a batch of fluffy home-made pancakes and plant-based sausage links! This $20 meal only takes about 20 minutes to make and can be enjoyed anywhere at anytime. That's a 20&20 for ya!

Ingredients

2 packages of Zoglo's Sausage Links, from frozen

1 cup of all-purpose flour

½ cup of whole wheat flour

1 ½ tablespoons of sugar

1 tablespoon of baking powder

¼ teaspoon of salt
-
1 ½ cups of your favorite non-dairy milk
-
¼ cup of unsweetened applesauce
-
2 tablespoons of vegetable oil
-
1 teaspoon of vanilla extract

Maple syrup (for accompaniment)
Directions
For the Pancakes
Combine all dry ingredients in a large bowl and mix with a whisk
Add in all the wet ingredients and whisk just until combined (Don't overmix!) Let the batter sit for a few minutes
Coat a large nonstick griddle or skillet with cooking spray over medium heat
Use a 1/3 measuring cup to scoop and pour onto the griddle. Cook until the edges are dry and you see bubbles on the surface
After about 3 minutes, flip the pancake(s) and cook until golden on the other side (this will take about 2 to 3 minutes more
Repeat with the remaining batter, coating the pan with cooking spray regularly
For the Sausage Links
Heat 1 tablespoon of oil in a medium pan over medium heat and cook the Zoglo's Sausage Links for 8 minutes, turning frequently

Notes: Made too many pancakes? Store them in the freezer then place them in the toasted to warm through!
