Plant Based Meatball Skewers with Red Pepper Jelly Glaze

Cooking Time:  25 minutes   |  Yields: 7 skewers 

Ingredients you’ll need:
  • 1 Package of Zoglo’s Incredible™ Meatballs
  • 1 Big Red Onion (cut into big triangular with 1½ inch sides)
  • ½ Red Bell Pepper (cut into big triangular pieces with 1½ inch sides)
  • ½ Orange Bell Pepper (cut into big triangular pieces with 1½ inch sides)
  • ½ Yellow Bell Pepper (cut into big triangular pieces with 1½ inch sides)

For the Red Pepper Jelly Glaze

  • ¼ Cup of Red Pepper Jelly
  • 1 Teaspoon of Dijon Mustard
  • 1 Teaspoon of Brown Sugar
  • 1 Teaspoon of Fresh Lime Juice
Instructions:

Step 1: Thaw the Zoglo’s Incredible™ Meatballs while soaking 7 mini-skewers in water 

Step 2:  Preheat the grill to medium-high heat. When heated, brush oil on it

Step 3: Thread the peppers, onion and meatballs alternately onto the 7 skewers by following this pattern: pepper, onion, meatball, onion, pepper, onion, meatball, onion, pepper

Step 4:  To make the glaze, microwave the red pepper jelly, mustard, brown sugar and lime juice in 10 second intervals (or heat in a pot over medium-heat!) until well combined

Step 5: Place the meatball skewers onto an oiled grilled for one (1) minute on all four sides

Step 6: Grill for another 6-8 minutes, turning and basting with the glaze occasionally

Step 7:  Serve the meatball skewers warm and garnish with fresh parsley if desired
