This plant based breakfast is just what you need on those days where you're craving something nutritious and delicious (don't forget fast too!) Who doesn't love a 20 minute breakfast?

Ingredients

1 package Zoglo's Sausage Links, from frozen
-
8 slices of ¾ inch thick, day old, rustic bread

1 cup of oat milk or any non-dairy milk
-
1 tablespoon of chia seeds
-
1 tablespoon of cornstarch
-
1 tablespoon of brown sugar
-
½ teaspoon of cinnamon
-
½ teaspoon of vanilla extract
-
A pinch of salt
-
3 tablespoons of coconut oil
-
Maple syrup
For Accompaniment
Directions
For the Plant Based Sausage Links
Heat 1 tablespoon of coconut oil in a medium frying pan over medium heat
Cook the Zoglo's Sausage Links for 8-10 minutes, turning frequently
For the Plant Based French Toast
Heat the remaining 2 tablespoons of coconut oil in a large non-stick frying pan over medium heat
Add all the ingredients into a blender and pulse for 30 seconds
Pour out the mixture into a rimmed dish and soak the bread on both sides until it is well coated
Cook for about 2-3 minutes per side or until golden brown.
To Serve
Serve French Toast with Sausage Links drizzled with maple syrup
