Plant-Based Cutlet Parmigiana with Fresh Tomato Sauce

Preparation Time:  20 minutes   |  Servings:  4

Ingredients you’ll need:
  • 1 Pack of Zoglo’s Incredible™ Cutlet
  • 2 Tablespoons of Extra Virgin Olive Oil
  • 1 Shallot (finely chopped)
  • 1 Clove of Garlic (gently crushed)
  • A Pinch of Hot Pepper Flakes
  • 600 Grams of Fresh Plum Tomatoes (coarsely chopped)
  • Salt (to taste)
  • Freshly Ground Black Pepper (to taste)
  • A Small Bunch of Fresh Basil
  • 4 Slices of Provolone Cheese [Optional]

Instructions:

Step 1:  Heat oil in a large non-stick, sauté pan over medium heat

Step 2:  Cook the Zoglo’s Incredible™ Cutlets for 3 minutes per side

Step 3:  Remove the Zoglo’s Incredible™ Cutlets from the pan and onto a plate. Set this aside

Step 4:  Add the shallot, garlic and hot pepper flakes to the pan along with a pinch of salt and pepper. Cook shallots until soft (about 2-3 minutes!)

Step 5:  Add the tomatoes to the pan with another pinch of salt. Stir well then bring it to a simmer. 

Step 6:  Cover the pan and let it cook for 7-8 minutes

Step 7:  Once enough time has passed, remove the lid, stir and cook everything for a few more minutes (this will make the sauce thicken!)

Step 8: Take the pan off of the heat and place cutlets on top of the tomato sauce

If Using Provolone Cheese:

Step 9:  Turn on the oven broiler

Step 10:  Place a slice of provolone cheese over each cutlet

Step 11:  Place the pan in the oven for 1-2 minutes (this will melt the cheese!)

Top with fresh basil and enjoy!

If Not Using Provolone Cheese:

Step 9:  Drizzle a little extra virgin olive oil over each cutlet

Top with fresh basil and enjoy!

Pro-Tip:  Serve this dish alongside pasta, rice or a ciabatta bun!
