Where else will you find a quick (20 minutes) and cost-effective ($20) meatless burger? We don't call it a 20&20 meal for nothing!

Ingredients
-
1 package Zoglo's Incredible Burger, from frozen
-
8 ½-inch slices of rustic bread (but slightly larger than burger patty)

4 slices of fresh mozzarella cheese (optional)

Bunch of arugula
-
½ cup of toasted almonds
-
½ cup of sun-dried tomatoes packed in oil (drained and chopped)
-
½ cup of kalamata olives, pitted
-
2 cloves of garlic, chopped
-
2 tablespoons of extra virgin olive oil
-
½ tablespoon of red balsamic vinegar
-
1 teaspoon of dried oregano
-
Freshly ground black pepper

For the Tapenade
Directions
For the Bread
Preheat the oven to 425 degrees
Place slices of bread on a lined baking sheet and drizzle both sides with a little olive oil
Bake in the oven until lightly golden on both sides (about 8-10 minutes). Be sure to turn halfway
For the Tapenade
In a food processor, pulse almonds 5 times to coarsely chop
Add in the sun-dried tomatoes, olives, garlic, 2 tablespoons of extra virgin olive oil, balsamic vinegar, oregano, and black pepper
Pulse until combined and smooth, stopping once to scrape down sides
For the Burger Patty
Heat a tablespoon of olive oil in a large non-stick frying pan over medium-high heat
Cook the Zoglo's Incredible Burgers for 3-4 minutes on each side
To Assemble
Place a generous spoonful of tapenade on a slice of tossed bread
Top with burger patty, mozzarella if using, arugula and another slice of toasted bread
