Not only does this hummus based dish make for a perfect snack, lunch or side, it's also a 20 minute meal that only costs $20!
Ingredients

1 package of Zoglo's Plant-Based Beef Pieces, from frozen
-
2 tablespoons of vegetable oil

1 can (398ml) of chickpeas, drained and rinsed

1 clove of garlic
-
2 tablespoons of lemon juice
-
½ teaspoon of cumin
-
½ teaspoon of salt
-
¼ teaspoon of freshly ground black pepper
-
1 tablespoon of tahini
-
¼ cup of extra virgin olive oil, divided
-
2 tablespoons of ice water
-
¼ teaspoon cayenne pepper
-
4 cherry tomatoes, quartered

Small bunch of finely chopped parsley

Directions
In a food processor, add in the chickpeas, garlic, lemon juice, cumin, salt, pepper, tahini, 3 tablespoons of olive oil and ice water
For the Hummus
Pulse a few times, scraping down the sides when necessary, and puree until smooth
Add in more oil or water (if needed) to puree until desired consistency
Spread onto a large serving platter or individual plates
For the Plant-Based Beef Strips
Heat the vegetable oil in a large non-stick pan over medium heat
Cook the Zoglo's Plant-Based Beef Pieces for 4-5 minutes, tossing occasionally
To Assemble
Place beef pieces onto hummus
Drizzle the remaining tablespoon of olive oil
Top with quartered cherry tomatoes, parsley, cayenne pepper and pita on the side

Notes: Don't be afraid to make extra hummus. You can keep this great healthy snack (lunch or side) in the fridge for up to a week!
