Ingredients
- 1 Pack of Zoglo’s Incredible™ Beef Style Strips
- 2 Medium Zucchinis (sliced into quarters then chopped into ¼ pieces)
- 1 Small Red Onion (thinly sliced)
- 2 Cloves of Garlic (thinly sliced)
- 1 Tablespoon of Dry Oregano
- 1 Tablespoon of Fresh Lemon Juice
- 2 Tablespoons of Extra Virgin Olive Oil
- Salt (to taste)
- Freshly Ground Black Pepper (to taste)
- 1 Pack (454 grams) of Penne Pasta
- Fresh Parsley [Optional]
- Finely Chopped Fresh Hot Peppers [Optional]
- Finely Chopped Parmigiano Cheese [Optional]
- Freshly Grated Nutritional Yeast [Optional]
Directions
Bring a large pot of salted water to a boil and cook pasta to package directions
Meanwhile, heat the oil in a large non-stick sauté pan over medium-high heat
Cook the Zoglo’s Incredible™ Beef Style Strips for 3-4 minutes (be sure to toss this occasionally!)
Remove the pan from the heat and take out the strips (with a slotted spoon!) into a plate and set aside
Return the pan back to the heat and cook the zucchini for 2-3 minutes
Add the onion and cook for 1-2 minutes
Return the strips back into the pan along with garlic, oregano, salt (to taste!) and pepper (to taste!) (Be sure to toss this well!)
Before draining the pasta, take a cup of pasta water and add it to the pan
Add in the pasta and toss it well
Add the lemon juice and a good drizzle of extra virgin olive oil to the pan
Pro-Tip
Garnish with parsley, fresh hot pepper, Parmigiano cheese or nutritional yeast for a Chef Pino finish!
