Pasta, Peas and Plant-Based Ground

Cooking Time: 20 minutes | Servings: 2

Ingredients You'll Need:
  • 1 Package of Zoglo's Incredible™ Ground
  • 1 Package of Orecchiette pasta (approximately 450 grams)
  • 1 Shallot (finely chopped)
  • 1 Celery Stalk (finely chopped)
  • 2 Cloves of Garlic (finely chopped)
  • 1 Tablespoon of Sage (finely chopped)
  • A Pinch of Hot Pepper Flakes [optional]
  • 2 Tablespoons of Dry White Wine
  • 1 Heaping Cup of Frozen Peas
  • 3 Tablespoons of Extra Virgin Olive Oil
  • ¼ Cup of Freshly Grated Parmigiano Cheese
  • Extra Freshly Grated Parmigiano Cheese [optional]
  • Good Quality Extra Virgin Olive Oil [optional]
  • Fresh Parsley [optional]
  • Hot Pepper Flakes [optional]

    Step 1:  Bring a large pot of salted water to a boil and cook pasta to package directions

    Step 2:  Meanwhile, heat oil in a large sauté over medium heat.

    Step 3:  Fry Zoglo's Incredible™ Ground for a few minutes, gently crumbling with a wooden spoon (for about 2-3 minutes!)

    Step 4:  Add shallot, celery, garlic, sage and (if you're using it) hot pepper flakes. Season with salt and pepper and fry for another 2-3 minutes, stirring occasionally

    Step 5:  Carefully add the white wine to the pan. Once the liquid is almost completely evaporated, add the frozen peas with 1 cup of the pasta water.

    Step 6:  Bring up to a simmer and warm the peas through for about 2 minutes

    Step 7:  Drain pasta and add it to the pan. 

    Step 8:  Gently toss pasta over low heat until well incorporated

    Step 9:  Take off the heat and mix in the Parmigiano (or Nutritional Yeast)

    Step 10:  Place into your serving bowl and garnic with a good drizzle of extra virgin olive oil, more Parmigiano, fresh parsley and hot pepper flakes (if desired)


    Pro-Tip:  Substitue Nutritional Yeast for Parmigiano to make this pasta dish Vegan friendly! 💪
