Ingredients
- 1 Baguette
- 1 Package of Zoglo’s Incredible™ 3 Mushroom Burger
- 2 Tablespoons of Butter
- 2 Tablespoons of Olive Oil
- 1 Onion (finely chopped)
- 2 Cloves of Garlic (finely chopped)
- ½ Teaspoon of Dried Thyme
- 1 113 gram package of goat cheese
- 1 Teaspoon of Fresh Lemon Juice
- Salt (to taste)
- Freshly Ground Black Pepper (to taste)
- Extra Virgin Olive Oil
- Freshly Grated Parmigiano Cheese
- Lemon Zest
- Fresh Parsley (finely chopped)
- Hot Red Pepper (thinly sliced)

Directions
Preheat oven to 425 degrees
Cut the baguette into ¼ - inch slices on the bias. Drizzle each side with a little extra virgin olive oil and place in a single layer on a lined baking sheet. Bake in the centre of the oven until lightly golden brown (that’ll take about 10 minutes!)
Meanwhile, melt butter with the 2 tablespoons of oil in a medium sauté pan over medium-low heat
Add the onions, garlic and thyme along with a pinch of salt and pepper (to taste!) and cook for a minute (or until the onions are slightly softened!)
Add the 4 Zoglo’s Incredible™ 3 Mushroom Burger to the pan. As they start to soften, use a wooden spoon to break patties apart and then gently mash and mix together (for about 8-10 minutes)
Add the goat cheese to the pan, stirring until well incorporated into the mushroom mixture. Check for seasoning, add the lemon juice and give it one last stir
Spoon the mushroom mixture evenly onto each piece of toasted bread
Place onto a serving platter and garnish with Parmigiano, lemon zest, parsley and hot pepper
