Meatballs in Coconut Curry Sauce

Cooking Time:  20 minutes | Servings: 2

Ingredients You'll Need:
  • 1 Pack of Zoglo’s Incredible™ Meatballs
  • 1 Medium White Onion (chopped)
  • 2 Cloves of Garlic (finely chopped)
  • 2 Tablespoons of Ginger (finely chopped)
  • 1 Tablespoon of Curry Powder
  • 1 Teaspoon of Paprika
  • ½ Teaspoon of Cilantro
  • ½ Teaspoon of Cumin
  • ½ Teaspoon of Turmeric
  • 1 Cup of Tomatoes (crushed and strained) OR Passata
  • 1 Can of Coconut Milk (400ml)
  • 2 Tablespoons of Vegetable Oil
  • Salt (to taste)
  • Freshly Ground Black Pepper (to taste)
  • Thai chillies (for garnish) [optional]
  • Fresh Cilantro Leaves (for garnish) [optional]
  • Lime (for garnish) [optional]

Step 1:  Heat oil in a large skillet over medium heat 

Step 2:  Cook the Zoglo’s Incredible™ Meatballs for about 4 minutes or until lightly browned on all sides (Be sure to toss them occasionally!)

Step 3: Remove the Zoglo’s Incredible™ Meatballs from the pan and set them aside. 

Step 4:  Return the skillet back to the heat and add onion, garlic, ginger, salt and pepper. Cook this for about 3 minutes or until the onion is soft.

Step 5:  Add curry powder, paprika, cilantro, cumin, turmeric to the pan. Stir this mixture for one minute (This will toast our spices!)

Step 6:  Add the cup of tomatoes OR passata to the pan and cook it for a few minutes (Be sure to mix it well!)

Step 7:  Add the coconut milk then bring the sauce to a simmer

Step 8:  Place the meatballs back into the skillet

Step 9:  Cover the skillet and lower the heat to a gentle simmer for 10 minutes


Pro-Tip:  Serve the meatballs alongside roti, rice or your favourite thai noodles! 💪
