Ingredients
- 1 Pack of Zoglo’s Incredible™ Meatballs
- 2 Medium White Onion (chopped)
- 4 Cloves of Garlic (finely chopped)
- 4 Tablespoons of Ginger (finely chopped)
- 2 Tablespoon of Curry Powder
- 2 Teaspoon of Paprika
- 1 Teaspoon of Cilantro
- 1 Teaspoon of Cumin
- 1 Teaspoon of Turmeric
- 2 Cup of Tomatoes (crushed and strained) Or Passata
- 2 Can of Coconut Milk (400ml)
- 4 Tablespoons of Vegetable Oil
- Salt (to taste)
- Freshly Ground Black Pepper (to taste)
- Thai chillies (for garnish) [optional]
- Fresh Cilantro Leaves (for garnish) [optional]
- Lime (for garnish) [optional]
Directions
Heat oil in a large skillet over medium heat
- Cook the Zoglo’s Incredible™ Meatballs for about 4 minutes or until lightly browned on all sides (Be sure to toss them occasionally!)
- Remove the Zoglo’s Incredible™ Meatballs from the pan and set them aside.
- Return the skillet back to the heat and add onion, garlic, ginger, salt and pepper. Cook this for about 3 minutes or until the onion is soft.
- Add curry powder, paprika, cilantro, cumin, turmeric to the pan. Stir this mixture for one minute (This will toast our spices!)
- Add the cup of tomatoes OR passata to the pan and cook it for a few minutes (Be sure to mix it well!)
- Add the coconut milk then bring the sauce to a simmer
- Place the meatballs back into the skillet
- Cover the skillet and lower the heat to a gentle simmer for 10 minutes
