Incredible Burger with Pickled Carrots, Sriracha Mayo and Sweet Potato Oven Fries

This isn't your everyday burger! Stacked with pickled shredded carrots, a few fresh cilantro leaves and sriracha mayo, you won't help but eat this Incredible™ Burger meal with a smile!

Ingredients
- 1 Package of Zoglo’s Incredible™ Burger
- 4 Hamburger Buns
- 2 Large Carrots (grated!)
- ½ Cup of Vinegar
- 2 Tablespoons of Sugar
- 2 Teaspoons of Salt
- 4 Medium Sweet Potatoes (washed, peeled and cut into ½-inch long wedges!)
- 3 Tablespoons of Vegetable Oil
- 1 Teaspoon of Paprika
- 1 Teaspoon of Garlic Powder
- Salt (to taste!)
- Freshly Ground Black Pepper (to taste!)

Fresh Cilantro [for garnish]
- ½ Cup of Mayonnaise or Vegan Mayo
- 2 Tablespoons of Sriracha Sauce
For the Sriracha Mayo
Directions
Place sweet potato wedges in a large bowl. Toss well with vegetable oil, paprika, garlic powder and a good pinch of salt and pepper. Place this on a parchment lined baking sheet (in a single layer!). Bake this in the centre of the oven for 20-22 minutes turning halfway
To pickle the carrots, place the shredded carrot into a small bowl along with vinegar, sugar, salt and water (just enough to cover the carrots!)> Mix this and set aside until ready to use (let this sit for at least 15 minutes!)
To make the sriracha mayo, mix the mayonnaise or vegan mayo with sriracha sauce. Set aside until ready to use
Heat the remaining tablespoon of oil in a large non-stick frying pan over medium heat. Cook the Zoglo’s Incredible™ Burger for 3-4 minutes per side
Toast the buns in the oven if desired
Drain the carrots and, with your hands, squeeze out as much moisture as possible
To assemble, smear the inside of the top and bottom bun with sriracha mayo. Place a Zoglo’s Incredible™ Burger patty on the bottom bun then top it with pickled shredded carrots, a few fresh cilantro leaves and the top bun
Serve alongside sweet potato wedges and the remaining sriracha mayo
