This is the best lunch/dinner you'll ever have! Tasty, meatless and good for you too! Try beating that!

Ingredients

1 Pack of Zoglo’s Grainburger
-
4 Pita Pockets
-
1 Cup of Ricotta Cheese
-
1 Big Hothouse Tomato (sliced and cut in half!)

1 Cup of Arugula
-
1 Pack of 400g French Green Beans (washed and trimmed!)

¼ Cup of Red Onion (thinly sliced!)

2 Tablespoons of Lemon Juice
-
2 Tablespoons of Olive Oil
-
1 Garlic (finely chopped!)

Salt
-
Freshly Ground Black Pepper
Directions
For the Vinaigrette!
In a large bowl, combine the lemon juice, olive oil, garlic, salt and pepper. Mix well
For the Green Beans!
Bring a large pot of salted water to a boil over high heat. Cook the green beans for 3-4 minutes (or until tender and crisp)
Add the green beans and red onion to the vinaigrette and mix well
For the Grainburger!
Heat a tablespoon of oil in a large pan over medium heat
Cook the Zoglo’s Grainburger for 3 minutes on each side
Cut the burgers in half and set aside
To Assemble!
Cut each pita in half
Open one half of the half pitas and stuff with ½ a Grainburger patty,a tablespoon of ricotta, a slice of tomato and a little arugula. Repeat
Serve alongside green beans

Notes: For a more vegan friendly meal, try replacing the ricotta for silken tofu!
