A step-by-step guide to Chef Pino's Chickenless Chicken Fajitas - Corn, Black Bean and Avocado Salad

Ingredients

1 Package of Zoglo’s Incredible™ Chicken Style Strips
-
1 Onion (thinly sliced)
-
1 Green Bell Pepper (thinly sliced)
-
½ Red Bell Pepper (thinly sliced)
-
2 Cloves of Garlic (finely chopped)
-
1 Teaspoon of Chilli Powder
-
1 Tablespoon of Paprika
-
½ Teaspoon of Cumin
-
¼ Teaspoon of Cayenne Pepper
-
8 Small Tortillas (7-inch)
-
Shredded Cheddar CheeseOR non-dairy shredded cheese [optional]
-
2 Tablespoons of Olive Oil
-
1 Can of corn (drained and rinsed)
-
1 Can of Black Beans (drained and rinsed)
-
1 Avocado (cubed)
-
2 Limes
-
2 Jalapeño Chile Pepper [optional]
-
Small Bunch of Fresh Cilantro
-
Salt (to taste!)
-
Freshly Ground Black Pepper (to taste!)
For the Salad
Directions
Warm the fajitas according to package directions
For the Salad
In a large serving bowl, place the corn, black beans and cubed avocado
Juice one lime into the mixture
Season the mixture with salt and pepper then toss
If desired, cut one jalapeño in half and remove the seeds. Dice the jalapeños and add it to the salad. Mix this well and top with a bunch of cilantro leaves
For the Garnish
Cut the second lime into wedges
Thinly slice the second jalapeño (if you’re using it!). Set aside along with a little cilantro and grated cheese for garnishing
For the plant based “Chicken”
Heat oil in a large cast iron or frying pan over medium high heat
Add the onion, green pepper and red pepper. Cook and stir until the vegetables start to become tender (about 3-4 minutes!)
Add in the Zoglo’s Incredible™ Chicken Style Strips and seasons with salt and pepper
Cook until strips are slightly golden and the vegetables are tender (this will take about 5 minutes, be sure to toss occasionally!)
Add in garlic, chilli powder, paprika, cumin and cayenne pepper while tossing and cook for another 2 minutes to toast the spices
Squeeze in a few lime wedges into the pan then remove from heat. Serve immediately
To Assemble
Spoon a portion of the peppers and strips onto the fajita
Top with shredded cheese, jalapeño slices, cilantro and a squeeze from a lime wedge
Serve salad alongside the fajitas
