Plant Based Holiday Brunch Bake

Cooking Time: 60 minutes   |  Servings:  6

Ingredients you’ll need:
  • 1 Package of the Zoglo’s Incredible™ Sausage Links
  • 4 Cups of Cubed Day Old Bread (cut in ½ inch cubes)
  • 1 Onion (chopped)
  • 2 Cloves of Garlic (thinly sliced)
  • 6 Eggs
  • 1 Cup of Milk 1 Cup of Shredded Cheddar Cheese
  • Chopped Chives (for garnish)
  • Salt (to taste)
  • Freshly Ground Black Pepper (to taste)
  • Olive Oil
  • Spicy Maple Syrup 
  • ½ Cup of Pure Maple Syrup
  • 1 Tablespoon of Hot Sauce

Step 1: Preheat oven to 425 degrees

Step 2: Heat a tablespoon of oil in a small pan over medium-heat

Step 3: Fry the Zoglo’s Incredible™ Sausage Links for 3-4 minutes (be sure to turn them frequently!)

Step 4: Add the onion and garlic and continue to fry for another 3-4 minutes

Step 5: Place sausage links onto a cutting board and a cut into bite size pieces. Set these aside to cool along with the onions and garlic

Step 6: Scatter the cubed bread on a lined baking sheet. Drizzle them with a few tablespoons of olive oil and mix well

Step 7: Bake the oiled cubed bread in the centre of the oven for about 10 minutes or until lightly golden. Remove them from the oven and allow to cool

Step 8: Lower oven to 375 degrees. Lightly grease a 9x9 casserole dish

Step 9: In a large bowl, lightly beat the eggs with the milk and a pinch of salt and pepper. Add the sausage mixture, toasted cubed bread and cheddar cheese. 

Step 10: Give it a good mix and pour it into the casserole dish. Let it sit for 15 minutes then bake it in the center of the oven for 35-40 minutes

Step 11: To make the spicy maple syrup, combine the syrup and hot sauce in a bowl. Set this aside

Step 12: Remove the bake from the oven and garnish with the chives. Spoon a big piece onto a plate and drizzle with spicy maple syrup


Pro-Tip: Garnish with chopped chives for a Chef Pino finish!
